French Toast Just Stole My Heart.

Last week, I was shopping at Trader Joe's and a loaf of brioche was screaming at me saying "Yo Mandi, gimme a chance to show you what I can do".

Aight brioche you did your thing. I made this 👇 French Toast over the weekend and damn, it was on point.

But here's the my previous life of keeping a mental list of food rules a mile long, I would never ever touch French Toast (you know that carbs are bad thing). If I was eating out and someone else ordered French Toast, I'd just stare at them while ordering and think "God, I'm so jealous that they can eat that with such joy."

By taming the food rules and internal dialogue through Intuitive Eating, I have been able to enjoy my forbidden foods again. It's not an easy process after 20 years of living with these rules but IT CAN BE DONE.

I don't wanna go through another day of giving power to the food police to determine what I eat with joy.


Steal Your Heart French Toast

From your mouth straight to your heart, this French Toast will make you all warm and fuzzy

Prep Time: 5 minutes

Cook Time: 15 minutes

Makes 12 pieces


1 loaf brioche bread, sliced (you can also use a thick Farmhouse style bread or Challah)

6 large eggs

1/2 cup milk (we used whole)

1 tsp. bourbon vanilla extract (you can obvi use regular vanilla)

2 tsp. cinnamon


100% Pure Maple Syrup


  1. Crack 6 large eggs into 8x8 baking dish. You can also use a shallow bowl.

  2. Add milk, vanilla and cinnamon to the baking dish. Whisk everything together.

  3. Heat a large pan or skillet over medium heat.

  4. While the skillet is heating, place slices of bread into the egg mixture and coat on both sides.

  5. Add a dab of butter to the pan to coat the bottom and place the slices of coated bread into the pan.

  6. Cook on each side until golden brown, about 2-3 minutes per side.

  7. Drizzle with maple syrup and if your feeling fancy a shot of confectioners sugar.
